At the foot of the Wilder Kaiser mountain in Kufsteiner Land, unique beers from Tyrol have been brewed since 2014. Christoph, Lisa and their team experiment with historical grains on the family farm, reinterpret classic styles and create beers that are as special as they are diverse. Bierol is a regional award winner and Gault & Millau winner. Bierol puts the circular economy into liquid form. Bierol is traditionally unconventional. At the foot of the Scheffauer in the Tyrolean lowlands, between forests and meadows, valleys and mountains, there is the Schwoicher Stöfflhof. Formerly a farm, today a farmhousebrewery. Actually since 2004, when farm owner Peter Bichler opened the first - at that time very traditional - brewery in the district.
However, almost ten years later, he was increasingly drawn to the Stöfflhütte on the Walleralm and his son Christoph was drawn to the brewhouse. Christoph had discovered craft beer in America. But it wasn't available in Tyrol. Not even for sale. So he decided without further ado: I'll brew it myself.
The first Tyrolean IPA was born, the first stout, the first barrel-aged beer specialty. He went to the then brand new Vienna Craft Beer Festival with hand-applied labels. And became a crowd favorite. Today, it is impossible to imagine the Austrian scene without Bierol - not only because the beers are so diverse, but also because they are high-quality and innovative.
Christoph, his wife and former beerjournalist Lisa and their team show what modern beer culture can do - from classic Zwickl to unusual beer rarities: they experiment with old historical grain varieties such as Wildschönau wheat or Inntal rye, which they grow themselves directly on the farm. They have launched a wooden barrel project in which they elaborately create exclusive specialties. They reinterpret classic styles by playing with special regional and international hop, malt and yeast varieties. And they practice a circular economy by feeding their own Schwäbischhall/Duroc pigs the grain that they have grown or brewed themselves, before the animals are later processed into high-quality dishes in Christoph's sister Caroline's award-winning restaurant of the same name.
They are not traditionalists, but they know where they come from. And you can taste that in every one of their beers.
